เกี๊ยวกุ้งทอด (crispy prawn wontons)



เมื่อวานทำเมนูนี้เป็นเมนูเร่งด่วนสำหรับมื้อเที่ยง
ต้องการกำจัดของที่มีอยู่ในตู้เย็นให้หมดก่อนไปเที่ยว....แผ่นเกี๊ยวซื้อมาแล้วแบ่งกับยัยจุ๋มกะว่าจะทำเกี๊ยวน้ำทานซะหน่อยไม่ทันแล้วทำเกี๊ยวกุ้งทอดก่อนล่ะกัน
ทำง่ายๆเร็วมากๆไม่ต้องวุ่นวาย
สูตร....เกี๊ยวกุ้งทอด

เนื้อกุ้ง    200  กรัม
ขิงขูดซัก   1  ช้อนชา
ผักชีซักนิดหน่อย
แอบใส่พริกไป 1 เม็ด
แผ่นเกี๊ยว








เอาใส่เครื่องปั่นเลยค่า







 ปรุงรสด้วย น้ำมันหอย 1 ช้อนชา
ซีอิ๊วขาว  1  ช้อนชา
น้ำมันงา 1 ช้อนชา 
น้ำตาลซักนิดหน่อยพอตัดรส
ใครชอบเค็มเติมเกลือเพิ่มนะเพราะไม่งั้นเดี๋ยวส่วนผสมมันจะเปียกเละเกินไป
ไม่มั่นใจว่ารสได้ที่ก็ตักเอาไปเข้าไมโครเวฟแล้วชิมโลด







ไม่ต้องปั่นให้ล่ะเอียดมากเกินค่ะเดี๋ยวจะกลายเป็นลูกชิ้นกุ้งไปเอาพอให้มี texture ของกุ้งกรุบๆๆเตรียมห่อเลยค่า





ตักส่วนผสมไว้ตรงกลางแผ่นไม่ต้องใส่เยอะมากเดี๋ยวสุกช้าแผ่นเกี๊ยวจะไหม้ซะก่อน







จับมุมด้านนึงชนกันเอาน้ำแตะๆมุมแผ่นเกี๊ยวด้วยนะจะได้ติดสนิท






จับเกี๊ยวเปลี่ยนท่าให้มุมแหลมชี้ลงข้างล่าง
แล้วหมุนปลายของทั้งสองด้านให้ติดกัน (อันนี้แล้วแต่เทนนิคใครเทคนิคมันนะจ๊ะ)







ได้ออกมาเยี่ยงนี้






ทำไปเรื่อยๆจนหมดเลยค่ะ....งามแต้







เตรียมทอดเลยจ้า







น้ำมันพร้อม....ใส่หม้อเลยจะได้ไม่เปลืองน้ำมันมากเกิน






ทอดใช้เวลาไม่นานไม่น่าจะถึงหนึ่งนาทีด้วยซ้ำพอแผ่นเกี๊ยวเหลืองทองก็เอาขึ้นเลย
เอากระดาษรองซับน้ำมันซะหน่อยจะได้ไม่เลี่ยนมากเกิน







ทานกับน้ำจิ้มและผักสลัด....คนข้างๆไม่ชอบน้ำสลัดอ่ะเราเลยไม่ทำน้ำราดทานแบบนี้ก็ดีค่ะไม่เลี่ยน







อร่อยค่ะง่ายๆๆไม่ยุ่งยากตอนแรกคิดว่าจะทานไม่หมด...ไม่อยากเชื่อหมดด้วยอ่ะ







อร่อย...ง่าย.....จนอยากบอกต่อ

Red Velvet Cupcakes

Red Velvet Cupcakes

with cream cheese frosting
yield | 12 cupcakes

Ingredients
1 cup cake flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon kosher salt
2/3 cup vegetable oil
3/4 granulated sugar
1 egg
1 teaspoon pure vanilla extract
2 tablespoons red food coloring
1/2 cup buttermilk
1/2 teaspoon baking soda
3/4 teaspoon white vinegar

Directions
1. Preheat oven to 350 degrees. Line 12 cupcake wells with paper liners or spray pan with spray with nonstick cooking spray.
 
2. Sift together cake flour, cocoa powder and salt.

3. In the bowl of a stand mixer fitted with the whisk attachment, combine oil and sugar until well-blended. Add egg and mix until combined.

4. Turn your mixer down to the lowest speed add vanilla then slowly add in the food coloring.
Note:If you are using liquid food coloring, it will take about 2 tablespoons of coloring to get a dark red shade.

5. Add flour mixture alternately with buttermilk in two batches; scrape down the side of the bowl. Continue mixing until just combined, taking care not to over mix.

6. Place baking soda in a small dish, stir in vinegar and add to batter with machine running. Beat for about 10 seconds.

7. Using a medium scoop (about 3 tablespoons), divide batter among between the 12 wells, filling each well about 2/3 full of batter. Bake for 20-24 minutes or until a toothpick inserted comes out clean. Be careful not to over bake.



Cream Cheese Frosting

yield | enough to generously frost 12 cupcakes

Ingredients
8 ounces cream cheese, softened to room temperature
2 tablespoons vegetable shortening
3 tablespoons butter, softened to room temperature
1 pound confectioners’ sugar (about 3 ¾ cups), sifted
2 teaspoons clear vanilla extract*

Directions
1. In a the bowl of a stand mixer fitted with the paddle attachment, cream together, cream cheese, shortening, and butter until well combined.
2. With the mixer of low, gradually add the confectioners’ sugar until thoroughly incorporated and smooth. Add vanilla and mix to combine.

Chocolate cake with chocolate ganache frosting



สองวันก่อน jenny โทรมาบอกว่าอยากให้อบเค๊กให้ edwina วันเกิดความจริงเค้าพูดตั้งแต่อาทิตย์ที่แล้วตอนไปดินเนอร์กันแต่ไม่คิดว่าจะเอาจริง
เราเองก็ไม่อยากเชื่อว่าชีจะมั่นใจฝีมือเรามากขนาดนั้น
การทำอาหารอร่อยไม่ได้หมายความว่าจะต้องทำเค๊กอร่อยใช่ป่ะ
แต่เมื่อขอมาเราก็จัดไป.....นอนไม่หลับเลยตื่นเต้นนี่ขนาดทำให้ฟรีนะยังตื่นเต้นเลยถ้าต้องทำขายล่ะ...555
ยึดตัวเค๊กสูตรเดิมจากห้องก้นครัวสูตรคุณแพรแต่เพราะนุ่มนิ่มดี
แต่ตัวช๊อคโกเลตไม่ได้ทำตามเจ้าของสูตรเดิมหรอก
เพราะเราคิดว่ามันไม่เหมาะกับการที่ทำให้คนพิเศษในครอบครัว





เราใช้วัตถุดิบอย่างดีในการทำครั้งนี้...ลงทุนมากซื้อช๊อคโกเลตของ lindt มาเลย
เพราะอยากให้ออกมาอร่อยสำหรับคนพิเศษ
เราใช้ chocolate ganache แทนช๊อคหน้านิ่มเพราะช๊อคหน้านิ่มคนอื่นกินบอกว่าอร่อย
แต่สำหรับเราเราว่าเราไม่ชอบอะไรที่มันแหยะๆเลยขอไฮโซหน่อยเอาแบบช๊อคล้วนๆดีกว่า

เหมือนที่ป้าปูบอกคนไทยเค้าทำขายเพราะต้นทุนถูกและคิดว่าได้กินช๊อคโกเลตที่ไหนได้ผงโกโก้ล้วนๆ...จริงด้วยแฮะกลับไปดูสูตรอีกรอบไม่มีช๊อคโกเลตในสูตรเลย




เป็นความภูมิใจอย่างมากที่ทำออกมาสำเร็จ
พลาดไปนิดเดียวตอนอบนั่นล่ะเพราะใช้ไฟแรงไปเปิดไฟถึง 200 องศาตามสูตร
ลืมไปว่าครั้งแรกที่อบหน้าเค๊กก็ไหม้พอครั้งที่สองไหม้อีก
เราเลยต้องลดไฟลงและทำเค๊กใหม่อีกรอบเพราะอยากทำให้ perfect สำหรับ jenny
คราวนี้ไม่พลาดอบที่ไฟ 180 องศาแต่ใช้เวลาอบนานกว่าในสูตรต้นฉบับน่าจะอบนาน 20 นาทีหรือนานกว่านิดหน่อย

เค๊กล๊อตแรกไม่ทิ้งเพราะไม่ได้เสียหายอะไร...แพคใส่ฟรีซไว้เอาไว้ทำให้เจ้าแตงทาน



จากนั้นเราก็ทำกานาซจากหนังสือของ rose อ่านแล้วเข้าใจดีอธิบายละเอียดดีมาก
เราใช้ chocolate แค่ 58 %สัดส่วน ก็ 1:1 whipping cream
แล้วก็ใส่เนยไป 1ใน3 ของสัดส่วนข้างบน

เค๊กสองปอนด์เราก็กะๆเอาว่าจะต้องใช้กานาซเท่าไหร่
กะได้เก่งมาก..........300 กรัม chocolate, 300 กรัม thick cream, 100 กรัม butter.


ปาดๆๆเข้าไปแต่งหน้าเค๊กไม่เก่งได้ออกมาแค่นี้ล่ะ
ไม่ชอบปาดเค๊กแบบเรียบๆดูเชยเลยออกมาเยี่ยงนี้




คราวหน้าจะลองทำอะไรอีกดี





เค้กช็อคโกแล็ตหน้านิ่ม((สูตรคุณแพร))
ส่วนผสม (1)
แป้งเค้ก 160 กรัม
ผงฟู 1/2 ช้อนชา
เบคกิ้งโซดา 1 ช้อนชา
ผงวานิลลา 1/2 ช้อนชา
เกลือป่น 1/2 ช้อนชา
ผงโกโก้ 50 กรัม
น้ำตาลทรายป่น 200 กรัม

ส่วนผสมที่ (1) ร่อนรวมกันทั้งหมด

ส่วนผสม (2)
น้ำ 100 กรัม
นมข้นจืด 50 กรัม
น้ำมะนาว 2 ช้อนชา
น้ำมันพืช 125 กรัม
ไข่แดง 4 ฟอง


ส่วนผสมที่ (2) รวมกัน

เอาส่วนผสมที่ (1)+ ส่วนผสมที่(2)
คนด้วยตะกร้อมือ
แล้วกรองด้วยกระชอน
แล้วพักส่วนผสมนี้ไว้
 
ส่วนผสม (3)
ไข่ขาว 4 ฟอง
น้ำตาลทราย 100 กรัม
ครีมออฟทาทาร์ 1/2 ช้อนชา

ตีไข่ให้เป็นฟองหยาบ ๆใส่ครีมออฟทาร์ทาร์ ตีต่อนิดหน่อยจึงค่อย ๆ ใส่น้ำตาลลงไป ตีให้ขึ้นฟูตั้งยอดแบบในรูป

นำไปผสมรวมกันกับส่วนผสมที่ (1) และ (2)
ตะล่อมเบา ๆ ให้เข้ากัน จนส่วนผสมเข้ากันดี
เทใส่พิมพ์ขนาด 8 นิ้วได้ 2 พิมพ์รองกระดาษไข ไม่ต้องทาไขมันค่ะ เข้าเตาอบอุณหภูมิประมาณ 180 c ประมาณ 15 - 17 นาทีทิ้งไว้ให้อุ่นจึงแซะออกจากพิมพ์ พักไว้
 
ส่วนผสมหน้าช็อค
(1)
ผงวุ้น 1 ช้อนชา
น้ำ 300 กรัม
นมข้นจืด 200 กรัม
น้ำตาลทราย 200 กรัม
โกโก้ 50 กรัม

(2)
แป้งข้าวโพด 40 กรัม
นมข้นจืด 150 กรัม

(3)
เนยสด 150 กรัม
เหล้ารัม 1 ช้อนโต๊ะ


                                วิธีทำหน้า

                                                          1. นำส่วนที่ (1) คนให้เดือด

                            2.ผสมส่วนที่ (2) ให้ละลายเข้ากัน แล้วใส่ลงไปในส่วนผสมที่ (1) คนให้เข้ากัน
ใส่แป้งข้าวโพดที่ละลายไว้แล้ว
แล้วจึงใส่เนยลงไปคน ๆ ให้ละลายตามด้วยเหล้าค่ะรอให้อุ่นซักนิดแล้วจึงราดลงบนเค้กค่ะ

Homemade walnut pesto

ช่วงนี้เรามีวันหยุดสามวันต่อเนื่อง…ดีใจมากมายเพราะได้ทำโน่นทำนี่หลายอย่าง

เมื่อวานตอนเย็นลงครัวทำอาหารวันๆหมกหมุ่นอยู่แต่ในครัวไม่อยู่ในครัวก็อยู่ห้อง ทำงานนั่งหน้าคอมทัั้งวัน พอมีเวลาว่างก็ต้องทำความสะอาดบ้านอีกเวลาผ่านไปวันๆเร็วมากเลย เฮ้อ..ทำอะไรไม่ค่อยจะทันเลย


เอาล่ะวันนี้เราจะขอนำเสนอ

Homemade Walnut Pesto

ทำก็ง่ายแสนง่ายรู้งี้ทำเองตั้งนานแระหลงไปซื้อเค้าอยู่ได้

สูตรนี้เอามาจากหนังสือ Gourmet Traveler ค่ะ

เจ้า pesto นี่อ่ะเอามาทำอาหารได้หลายอย่างมากๆเช่นพวกอาหารประเภทพาสต้าหรือเอามาใส่ หน้าพิซซ่าหรืออะไรก็ได้แล้วแต่เราจะครีเอทเอาค่ะ..อาหารฝรั่งไม่ยุ่งยาก เหมือนอาหารไทยบ้านเราเนอะแต่ที่เราทำวันนี้เราจะเก็บเอาไว้ทำ pesto lasagne ค่ะซื้อวัตถุดิบมาหลายวันกลัวว่ามันจะเน่าคาตู้เย็นซะก่อน



ตอน แรกก็ไม่คิดจะเอามาลงบล๊อคหรอกค่ะแต่พอทำแล้วชิม….เอ อร่อยแฮะอร่อยกว่าในขวดที่ซื้ออีกแถมสด สะอาดไม่ใส่สารกันบูดด้วยเลยอยากจะเอาสูตรมาแบ่งปันกัน



เริ่มกันเลยค่ะ



สูตร



Italian parsley 1/2 ถ้วย (กดให้แน่น)

Italian basil 1 1/4 ถ้วย (กดให้แน่นเหมือนกัน) ไม่มีรูปจ้าเพราะปั่นรวมไปหมดแล้ว

กระเทียม 1 กลีบ (เราใส่สองเลยชอบจัดๆ)

parmesan 60 กรัม

น้ำมันมะกอก 2/3 ถ้วย

วิธีทำ

ไม่มีไรมากเอาส่วนผสมทุกอย่างลงใส่เครื่องปั่นเลยค่ะ

ปั่นให้ละเอียด..ชอบแบบเนียนๆปั่นนานหน่อย

เราชอบไม่เนียนปั่นแป๊ปเดียวเองจ้า

เห็นมะง่ายนิดเดียวเองลองทำกันดูเนอะ

ทำเสร็จเก็บใส่ขวดเข้าตู้เย็นเลย...เอาน้ำมันมะกอกเติมใส่ลงไปในขวดเก็บไว้ในตู้เย็นนาน 7 วัน

เอามาทำพิซซ่าตอนเที่ยงของวันรุ่งขึ้น....อร่อยแบบไม่อ้วนเท่าไหร่เพราะชีสไม่ตูมๆๆ







เอามาทำลาซานญ่าตอนมื้อเย็น (เพิ่งทานหมดเมื่อกี้นี้เอง) รสชาดอร่อยใช้ได้ล่ะ

แปลกดีเคยทานแต่ลาซานญ่าแบบซ้อสแดง.......แต่แบบนี้ก็แปลกไปอีกแบบ

1st Failed macarons


I really wanted to know how to bake macarons after I have been reading and studying a lots from internet, food blogs or youtube (even in French I don't even understand French )


So today I decided to make some. I don't care if I don't succeed because all about experience and I just wanted to have a feel how to bake them.



We have a very good patisserie near by and they make a very good macarons cost $2.50 each.
I am not a sweet tooth person but I love baking and want to learn new things and I will not give up.



I knew what I did wrong !!!!


First batch : chocolate macarons I believed beat my egg-white too long and I didn't leave my macarons long enough in the room temperature to let macarons's skin dry ...I thought they would have been left for long because 2.5 hours.. too longgggg






Second batch : yellow one this one I just wanted to try from Gourmet Traveler recipe but I knew since I started piping my first macarons on baking paper because it didn't look like macarons but it looked like meringue 5555






Well !!! I am not disappointed and I had fun and I still eating shells itself.
Luckily, I didn't make filling yet...I think this is just like baking cake..you have to make sure you can bake cake base until they are perfect before moving on to next step.
I will do it again until they are perfect..

Double chocolate cookies



One of my favorite baking skill is baking cookies.
Baking cookies are fun and easy to bake.
We never short of biscuit or cookies at home.







I remember how I started to bake cookies it because when I buy them I never have got what I wanted and they are expensive too.
So I learn and taught myself to bake a perfect cookies. As the same as cooking if you cook a lot and do it again and again you will be a perfect cook.


This recipe comes from Bill Granger's cookbook and I did only half of recipe.
I think what I did wrong was I put full quantity of cocoa powder but taste was still great.
This cookies are not sweet and full of dark chocolate.
As you can see I put extra on top of my cookies too.....yummy for chocoholic. 






I have been baking for 2 days and I am so tired. For now I get back and prepare for 4 days working in my roll.....I will bake again when I have day off next time....
